I have some great enchilada recipes on the blog, but I realize that I have never really made traditional enchiladas. This recipe is outstanding! Enchiladas Dulces (or Sweet Enchiladas) are made of fried tortillas dipped into a rich chocolate sauce. The combination of flavors and texture made my mouth and taste buds sing with joy! I found the 2 lower sweet potatoes were softer and more flavorful than the ones on top.

??? What do you do with the other 1/3 of enchilada chicken? the potatoes just got too mushy and wet for me in the slow cooker. Add the beef filling to the center of each tortilla and rolls them tightly, placing them next to each other in the dish. They make the best enchiladas ever! @Gail Did you use the calculator or recipe builder. It says to cook for 6 hours on Low. My husband added green salsa to his. Maybe I’ll let this cook through, and have it tomorrow instead. There won’t be any direct heat besides from the tinfoil, which does not hold heat well in the first place. Whisk in flour until blended. Easy to make and very filling and satisfying.

How long would you cook this in the instant pot? Add the arrowroot flour, chili, salt, garlic powder, onion powder, and cumin and stir together over the heat constantly for 1 minute. If you’re an enchilada chicken fan, you’ll love these easy loaded sweet potatoes. That made cleanup easy. I also increased the enchilada sauce to 1/2 cup since it needed some extra. May have to overlap. Add a piece of whole cinnamon.
